Curry Leaves Millet Rice

We all know how beneficial is curry leaves, still we throw the leaves away while having meal. We always give least importance to this amazing iron and antioxidant rich nutritious leaves. I try to include this while making juices and podi varieties. Amla juice recipe in our channel has raw curry leaves. Also whenever we make any podi varieties it’s a good practice to include a handful of curry leaves while roasting and grind it along with other ingredients. Apart from health benefits, adding curry leaves gives a unique flavour to the food. Curry leaves are very much beneficial for hair. We can prevent premature greying if we include curry leaves in our diet daily. Curry leaves also helps to prevent cancer and helps to maintain good eye health. I have used barnyard millet for preparing this rice recipe. You can try the same recipe with usual white rice and other millet varieties too.

Ingredients

  • To Roast and Grind
  • 1. Urad dhal - 2 tbsp
  • 2. Coriander seeds - 1 tbsp
  • 3. Cumin seeds - 1 tsp
  • 4. Pepper corns - 1 tsp
  • 5. Red chilli - 3 nos
  • 6. Curry leaves - 1 cup
  • Main
  • 1.Gingelly oil - 1 tbsp
  • 2. Mustard seeds - 1 tsp
  • 3. Bengal gram dhal - 1 tsp
  • 4. Urad dhal - 1 tsp
  • 5. Ground nuts - 4 tbsp
  • 6. Red chilli - 2 nos
  • 7. Curry leaves
  • 8. Cooked millet rice - 2 cups (Barnyard millet)
  • 9. Pink salt - as required

Instructions

  • 1. Heat your Cast Iron Skillet and add gingelly oil, urad dhal, coriander seeds, cumin seeds, pepper, red chillies, fresh curry leaves and sauté.
  • 2. Cool down for a minute and put all these fried ingredients in mixie and grind it into a fine coarse powder.
  • 3. Heat your Cast Iron Skillet and add gingelly oil, mustard seeds, Bengal gram dhal, urad dhal, ground nuts, red chillies, and add cooked millet rice (Barnyard millet) and sauté.
  • 4. Add salt and grounded Curry leaves powder as required. And garnish it with Curry leaves.
  • 5. Nutritious and healthy Curry leaves millet rice is ready to serve.
